I have seen online somewhere that X7 would be release today May 20th. Does anyone here have an update on that? If not today, do we know when?

EndNote X7 for Windows is availble now from www.endnote.com [and through our distributor and reseller network worldwide] - for trials and direct purchase.
If you have access to EndNote via a university site license, it may take a couple of weeks for your university to make the new version available to everyone.
EndNote X7 for Macintosh is currently in development and will be released by the end of the summer.
